長年大切に読んでたので、表紙の四隅にスレがあります。
中はわりと綺麗です。
レシピがのっていて勉強になります。
写真も多いです。

パリの16区、エッフェル塔からも遠くない場所にパリ一予約が取りづらいと言われるレストランがある。その名は『ASTRANCE アストランス』 そしてこのレストランでシェフを務めるのがPascal Barbot パスカル・バルボである。

元々パリの3ツ星である『Arpage アルページュ』のAlain Passard アラン・パッサールの元でスー・シェフとして働いていた彼は、27歳という若さでアルページュのメートル・ド・テルである Christophe rohat クリストフ・ロアと共にアストランスを立ち上げる。

その直後から予約が殺到し、席数がそんなに多くない事もあり、いつ予約の電話を入れても満席と言われるほどの人気となった。

彼の料理は素材の良さを引き出した料理である。こう書くとシンプルだが、その徹底ぶりは並大抵ではない。“素材との会話”これが、彼のスタイルではないだろうか。その日仕入れた食材と会話し、その食材が最も輝く調理法、味付けをお客様の要望にあった形で料理へ完成させ、クリストフ・ロア率いるサービス陣が提供する。

このスタイルはアラン・パッサールから、パスカル・バルボへ、そして東京の『Quintessence カンテサンス』の岸田周三へと間違いなく受け継がれている。

話が逸れてしまったが、この本の面白い所は各料理に完成までの経緯やシェフの考え方や哲学が書かれている所だ。シェフであるパスカル・バルボが何処で誰と出会い、何を見聞きし、何を感じ・・・、そして出会った食材と会話し、どのような料理に仕上がったか。読めば読むほど惹き込まれる一冊だ。
